“Zero Edge” Technology
“Kasane” is a new brand of knives created by Sumikama Co Ltd, a well-established Japanese knife maker. These knives feature a proprietary technology developed by the company, which allows knives to maintain their sharpness longer. The blades are processed and sharpened in a special way that helps prevent them from going blunt. According to the company’s research, the “Zero Edge” technology has successfully reduced the decline of sharpness, keeping it at around 80% as compared to other products in their internal testing.
Story of “Kasane”
“Kasane” means layering. It refers to many aspects of Japanese culture and lifestyle, such as the ancient art of layering colours in Japanese kimono, or many layers of colour in the changing seasons, or the beauty of various layers of one’s life experiences. There are also many layers of effort put into creating this innovative bread knife. When a company is brave enough to address their own gender disparity, deciding to reflect more female voices, and when with all male in-house designers give way to a female designer outside the company, the result is just so perfect. The company has previously awarded two prestigious design awards from the leading international consumer goods trade fair “Ambiente Messe“.
The “Kasane” series comes with two other knives: Kasane Bread Knife 21cm and Kasane Petty Knife 12.5cm.
How to Care
– To maintain the sharpness of your knife, we recommend that it is hand-washed.
– Do not leave unwashed for long after cutting citrus such as lemon or orange.
– To sharpen, you can use a whetstone or;
– Consult a professional sharpener who is familiar with Japanese knives or;
– Use a Japanese water sharpener.
– Do not use a sharpening lod.
Super light-weight (nearly half the weight of average knives) means you can comfortably use it for longer periods of time.
