Inaniwa Udon is one of Japan’s finest traditional noodles, handmade in the quiet town of Inaniwa in Akita Prefecture. Once gifted to the Shogun and later served at the Imperial Household during the Meiji era, this noodle has long represented refinement and prestige.

With its silky texture and elegant firmness, Inaniwa Udon is thinner and more refined than regular udon. It delivers a smooth, satisfying mouthfeel whether served warm in broth or chilled with dipping sauce. Every strand reflects centuries of care and precision.

160 Years of Mastery — A Family Legacy

The Sato family perfected their method in 1860 and have passed it down through generations in a rare, one-heir-only tradition. For over 160 years, they have preserved the art of Inaniwa Udon with absolute consistency — staying true to its roots.

Today, descendants of the original family still make these noodles using the same trusted techniques, ensuring the flavour remains just as it was more than a century ago.

Crafted Entirely by Hand Over Three Days

From kneading to twisting, stretching, and drying, every step of the noodle-making process is performed by hand over the course of three days. Skilled artisans use only pure water, select salt, and finely milled flour to create dough that is repeatedly worked and rested. This process allows the noodles to develop a light, airy texture that retains its bite even after cooking.

The final drying stage is carefully adjusted by the craftsman each day, based on the weather and humidity — a detail that machines simply can’t replicate. This human touch ensures the highest possible quality with every batch.
