“Zero Edge” Technology
“Kasane” is a new knife brand from Sumikama Co Ltd, a renowned Japanese knife maker. The knives feature a unique technology developed in-house to maintain sharpness for longer. The company processes and sharpens each blade in a special way that slows down dulling. Research by Sumikama shows that “Zero Edge” helps retain about 80% of sharpness compared with other products in their internal tests.
Story of “Kasane”
“Kasane” means layering. When a company is brave enough to address their own gender disparity, deciding to reflect more female voices, and when with all male in-house designers give way to a female designer outside the company, the result is just so perfect. I love the kasane knives from Shokuninstore – they are amazing… and quite addictive. I started with the bread knife which is fabulous to cut sourdough, then moved on to the 16.5 versatile knife and are now purchasing the smallest petty knife. The blades cut through food so easily and I’ve decided this is really all I need. No more ugly knife block on the bench! The beautiful cherrywood handles are a joy to hold – the only careful consideration is to make sure the knives are hand washed. Not a problem for me but I know many people put their knives straight in a dishwasher.

Just wanted to say thank you for the wonderful products we’ve purchased from Shokunin Store recently. The kitchen knives are outstanding, and all three cover everything I need for cooking. They’re incredibly versatile.
I really appreciate the quick deliveries and the handwritten letters that come with them.
I also purchased a set for my mum, who loves them just as much.
Thanks again.
