I have been using the Hokuto Fish Boning Pliers as a professional for 15 years.
I still use the older model, which has never broken and continues to be a tool I can rely on in my work. It’s exceptionally easy to use and unlike any other boning pliers.
The difference becomes clear when removing bones from fresh fish such as sashimi.
With ordinary, inexpensive pliers, you have to pull hard to remove the bones, which often crushes them or damages the flesh.
The Hokuto pliers, however, have flat tips and a perfectly balanced grip, allowing bones to come out smoothly with just a gentle pull. They don’t crush the bones and keep the fish beautifully intact. Other pliers tend to grip too tightly, cutting the bones or breaking the flesh. With the Hokuto pliers, the bones come out naturally, without needing much force, so the flesh stays perfect.
Recently, I tried this new 8R model. It’s lightweight and easy to handle, ideal for those who work long hours. I was so impressed with its quality that I also shared it with two other professional chefs in the industry.
